So one of the reasons I ride my bike so much is because I like to eat. The more I ride, the more I get to eat. Doesn’t food & drink taste better after a ride? I certainly think so. As “they” say breakfast is the most important meal of the day. I sorta agree but mainly we just love breakfast food. PCG and I have been making the same egg sandwich for years and we STILL aren’t tired of it. I am not kidding you when I say we literally eat this sandwich every morning.
Eggs, tasty bread, prosciutto, spinach & Farmers cheese. Hold up…spinach? Yup…
Back to our Five Alive (five servings of fruit or vegetables a day) inspiration. Breakfast is a great way to sneak in a veggie (my mom will be so proud). Can you tell which egg is the locally sourced (thanks Johnny Law), gluten free, bug eating, no antibiotics, no preservatives (that would be weird), free range chicken egg? But seriously, it does taste better.
I prefer bacon. But eating bacon everyday would require a bit more riding! I have found prosciutto to be a nice savory substitute. You can find this brand at Sam’s Club. It’s been our favorite so far.
Just add whatever your favorite cheese is.

Tips & Tricks
Sometimes it’s the little things that help you get the day going on the right foot. Breakfast can be a challenge. It is hard sometimes to get all your stuff together and make it to work on time. Ever since Fitz was born I have been setting everything up the night before so all I need to do is grab the ingredients out of the fridge and start cooking. I can make two sandwiches under 10 minutes! Wish I could STRAVA that and make it a segment. I know…I am a huge nerd.
